    I do not claim to be a Cajun cook, but having lived in South Louisiana for some 60 years, I have learned a lot about how to prepare Louisiana food, which to me is the greatest tasting food in the country.
    A favorite Cajun expression is “To pass a good time”. Three things are usually present in order to “Pass a good time” and they are, Good friends, Good music and most important, Good food. I have tried to put together a collection of easy to fix Louisiana and Cajun recipes that have been tried and tested. These are not all my creations but come from many sources such as friends-relatives, famous Louisiana chefs and some that I have collected over many years. And I truly thank them all for their help.
